Bressanone: cheese poetry and wine in the abbey

We have an appointment with a pioneer in the art of cheese-making.

His “Primo Amore” and “Diavoletto” are both fresh goat’s milk cheeses that offer a surprise to the palate that matches their poetic names. How does a simple fresh goat’s milk cheese become such a special gastronomic experience? Embellished with a variety of different local products such as herbs, fruits and South Tyrolean beer, there are no limits to the imagination and creativity of this artisan. With gentle care and attention to detail, our cheese lover and expert manages to give a simple cheese a completely unique flavour.

Following the cheese tasting, a short walk takes us to the garden of the Novacella Abbey. In the monastery garden of the Augustinian canons, and amidst the scent of aromatic herbs, a glass of fine white wine in our hands, we let the day pleasantly come to an end.
